Why Am I Waiting For An Open Table?

One of the most common frustrations guests have with restaurants is waiting to be seated when they can see empty tables.  Restaurants have a great deal of incentive to not have tables sit empty.  An empty table does not make any money for a restaurant.  An overloaded staff actually costs the restaurant money.  It is a ballancing act and one that the best restaurants are very good at.  This does not seem to but irritated guests at ease.

Foodie Knowledge is the place where I try to clear up misperceptions guests have about the restaurant industry.  This particular topic will be addressed in a three part series.  I can already anticipate the response and have the next post completed.  This ought to make for some very good reading.  So feel free to share with all your friends why restaurants make you wait for empty tables.
